Grilled Pizza

My husband and I don't currently have a grill - I know very sad!
But, I found a cast iron grill pan at TJ Maxx, for $14.00!!
For now - that will due.
Pizza is always an experiment for us & finding a delicious crust is a quest.
But, we found how to make a perfect crust using a grill pan.

Grilled Pizza

1 slice (5 oz) ham steak
1 pineapple, cored and cubed
olive oil
1 lb pizza dough, store bought or homemade
1 1/2 c fresh shredded mozzarella
2 scallions, thinly sliced (opt.)

1. Preheat grill pan to a medium heat.  Grease pan with olive oil if not seasoned.
Add ham and pineapple, cover and cook, turn once until it is charred nicely on each side. Around 5 minutes per side. Remove and set aside.
2.  Cut pizza dough into individual serving depending on how many people you have to serve and how much pizza dough you have. I made this recipe, Pizza Dough, & it was quick and easy. It made 4 square invidual pizza's that were a good size individual pizza. ( I couldn't quite finish it :)) Once your dough is rolled out, rub each side of pizza dough with olive oil. 
3. Place your dough on the grill, cover and cook until it bubbles on top and there are grill marks. For a soft dough, 3 minutes, for a more crisp dough, 5 minutes.
Turn the crust and top with cheese, ham, pineapple and all toppings you desire. Cover and cook until cheese is melted & crust is golden. Another 3-5 minutes depending on the texture you desire.

crushed red pepper
